Ingredients

Seasoning

  • 12 noci
  • 80g di speck
  • 100ml di latte fresco intero
  • 50g di Parmigiano Reggiano
  • olio EVO q.b.
  • sale q.b.
  • pepe q.b.

Pasta

  • 360g di Casarecce Glutiniente
  • Acqua
  • Sale

Method

Place a pot with plenty of salted water on the stove in which you will cook the pasta. While the water heats up, also place a medium-sized frying pan with a drizzle of extra virgin olive oil on the stove and let it heat up. Shell about 10 walnuts and coarsely chop the kernels with your hands. Place the kernels in the pan with the oil and toast them for a couple of minutes, taking care to turn them continuously with a ladle. At this point, place the walnuts, Parmesan cheese, milk and pepper in a blender and turn the mixture into a velvety cream. Reduce the speck to strips, add it to the pan and brown it in the oil. After cooking the pasta, simply toss it in the pan for a few minutes with the cream and speck until you get the desired consistency.
