For the dressing

  • 2 fennel bulbs, thinly sliced
  • Juice and zest of one orange
  • 1 tablespoon of extra virgin olive oil
  • 2 tablespoons of butter
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

For the pasta

  • 500g Gnocchetti Glutiniente
  • Water
  • Salt



Begin by slicing the fennel bulbs thinly, remembering to reserve some for final decoration. At this point, bring a pot of salted water to a boil and cook the gnocchetti until they are al dente, then drain them. While the pasta is cooking, start preparing the sauce. In a large skillet, heat the olive oil and butter over medium heat, add the fennel slices, and cook for 3-5 minutes until they become crispy. Then, add the orange juice and zest. Let it cook for another 2-3 minutes. Once done, add the gnocchetti directly into the skillet with the orange and fennel sauce, gently toss to combine, and transfer the ready pasta to serving plates. Garnish with some fresh fennel fronds and, if desired, sprinkle with grated Parmesan cheese to taste. A light and aromatic dish with a fresh and unique flavor. Enjoy your meal!
